Avocado, Tomato, and Hummus: An Easy and Healthy Toddler Sandwich!

Ingredients
- 1 tablespoon Haas avocado, mashed
- 1/8 teaspoon lemon juice
- 1 slice whole wheat bread
- 1 tablespoon store-bought hummus
- 1-2 tomato slices, sliced paper thin
Directions
In a small bowl, add the lemon juice to the mashed avocado and mix well to prevent browning. Cut the bread down the middle to create two equal halves. Evenly spread the mashed avocado onto one of the halves. Evenly spread hummus onto the other half, then top with tomato slices. Place the avocado half on top to create a sandwich. (Be sure to give it a good press so that the halves stick together!) Cut the sandwich in half or into bite-sized pieces appropriate for your toddler. Serve.
(Tip: What can you do with the rest of the avocado? Since this recipe does not require 1 full avocado, dice or mash the unused portion of avocado, sprinkle lemon juice on top, and mix to prevent browning. You can store the unused portion in an air-tight container, refrigerate, and use within 24 hours.)
